Dum Aloo (Potato) Sabzi

Ingredients:-

  • Small size potatoes

    For Gravy Masala:-
  • Kaju pieces(Cashewnut) - 1 ½ tbsp
  • Khas Khas(Poppy Seeds) - 1 tbsp
  • Kharbuja seeds(Watermelon Seeds) -1 tbsp for thickening

  • For Khada Masala:-
  • Tejpata - 1
  • Dalchini - 1 inch
  • Cloves - 2
  • Black Pepper - 8
  • Cinnamon - 2

  • For Main Gravy:-
  • Oil - 2 tbsp
  • Jeera or Cummin Seeds - 2 tsp
  • Tejpata - 1
  • Hing(Asafoetida) - Just a pinch.
  • Tomato puree - of 4 tomatoes
  • Green Chilli and Ginger paste - 1 tsp
  • Haldi - 1/2 tsp
  • Red Chilli powder - 1/2 tsp
  • Amchoor(Mango Powder) - 1/2 tsp
  • Dhania Powder(Corriander Powder)- Very little
  • Add the above masala paste - 1 ½ tbsp
  • Garam Masala - little
  • Kasoori methi- little
  • Salt to taste

  • For Garnishing:-
  • Finely chopped corriander leaves

  • Recipe:-
  • Boiled small size potatoes with salt and later, fry them
  • Boil the Gravy masala and khada masala ingredients in water till kaju softens. Strain most of the water and grind it in a mixer to a smooth paste.
  • Take a oil in a pan and add jeera,Tejpatta,hing and tomato puree.
  • Let it boil for some time.
  • Add green chille and ginger paste, haldi, red chilli powder, amchoor, garam masala,grinded masala paste for gracy, dhania powder, kasoori methi and salt to taste.
  • Keep cooking and stirring and add a little hot water if needed for the density of the gravy
  • Add the fried potatoes to the gravy and serve.

  • Serving:-
  • Serve hot and garnish it with finely chopped corriander leaves.
